Ingredients:
- 1 lb ground bison
- 2 tbsp bison tallow (or olive oil)
- 1/2 cup sweet peppers, chopped
- 1/2 cup onions, chopped
- 1/2 cup celery, chopped
- 1/2 cup mushrooms, sliced
- 3 to 4 cups bone broth
- 1 cup wild grain rice (prepared separately)
- 6 to 10 stalks of asparagus, tender and broken into smaller pieces (optional)
- Chopped zucchini or squash (optional)
Instructions:
1. Prepare the Rice: Cook the wild grain rice according to package instructions and set it aside.
2. Brown the Ground Bison: In a cast-iron skillet over medium heat, Break it up with a spatula as it cooks until fully browned and no longer pink. Remove the cooked bison, will add back, later step.
3. Sauté the Vegetables:
Add the bison tallow to your skillet, once heated, add all chopped chopped vegetables. (This is also when you can add the optional veggies. Cook for about 5–7 minutes, stirring occasionally, until the vegetables are tender and fragrant.)
4. Add Rice and Bone Broth: add the bone broth and prepared rice and bison meat to the skillet.
Simmer: Lower the heat and let the medley simmer for 15 to 20 minutes, allowing the flavors to meld and the broth to slightly reduce.
5. Serve: Remove from heat and serve hot. This dish is perfect on its own or with toasted sourdough garlic bread.
